Coconut Biscuit Ingredients

– 500 grams of white butter
– 500 grams coconut sugar
– 500g of desiccated coconut
– 50 grams of desiccated coconut for sprinkling on top
– 500 grams wheat flour or coconut flour
– 50 grams of milk
– 50 grams of coconut milk
– 1 tbsp baking powder
– 2 tsp baking soda

 

How to make these biscuits

  • Gather and weigh all ingredients. Preheat oven to 160 Celsius
  • In a mixing bowl, mix the ingredients using a whisk, and beat the butter and sugar until they form a creamy consistency.
  • Add the remaining ingredients and knead the dough together
  • Let sit for a few minutes in a bowl covered with cling wrap in a cool room-temperature area.
  • Place the dough on the dough mat, and roll it roughly with a rolling pin into a 1.5 cm thick rectangle.
  • Cut the dough with a cookie cutter into small circles or use a cookie cutter
  • Place the pastries into the tray, sprinkle the desiccated coconut on top, and bake at 160 Celsius for 10-12 minutes.
